The Channidae (Plaa Chon) fish is a wide spread fresh water fish ,frequently used for cooking Thai dishes.

One of the popular preparations for this fish ,is a very simple but brilliant dish called "Neung Manao" or in translation to English - steamed with lemon.
It consists mainly of a very short cooking of the fish in a simple steaming dish,together with herbs (such as lemongrass and basil) and lots of garlic ....
Once it's cooked thoroughly(but not overcooked!!! - it should retain it's natural sweetness),it is served garnished with a generous load of piquant sauce consisting of fresh chili pepper ,fresh squeezed lime and fish sauce.
Voila'....That's all it takes to have a heavenly dish that brings the most of the fish's subtle flavors(yes,the fish
must be fresh ).



BTW-This preparation can be adopted ,with a similar success ,to other kinds fresh water fish,as well.
