Roasted Aaparagus with Blood Oranges
Ingredients:
One bunch of asparagus (thick spears)
Olive oil
Grated Parmigiano-Reggiano
Salt and pepper
2 blood oranges
Or regular oranges or lemons
Method:
Wash and trim asparagus
Coat asparagus with olive oil
Then roll in Parmigiano-Reggiano
Place on parchment lined baking sheet
Season with salt and pepper
And top with blood oranges
Roast at 375 degrees for about 20 minutes until
Crusty and brown
