Summer Vegetable Potato Salad

 

Ingredients

2 Lbs of red potaotes boiled and sliced

1 red onion-chopped

4 sliced scallions

1 English cucumber-cut into a medium dice

3 Bell peppers-red,green,yelllow cut into a medium dice

3 celery stalks-medium dice

1 Pint of cherry tomatoes cut in half

1 cup of blanched snow peas

½ cup of chopped fresh cilantro

½ cup of chopped fresh basil

½ cup of chopped fresh parsley

½ teaspoon of dried chervil

 

Viniagrette

1 chopped shallot

2 tsp of dijon mustard

1 tsp honey

Wisk in ½ cup of white balsamic vinegar

Then wisk in a ½ cup of olive oil

Pour the dressing over the potaotes and vegetables.

Season with salt and pepper
