              Tomato Gratin Provencal

1 Large Casserole

This dish is great utilizing summer tomatoes and basil.

 

Ingredients:

8-10 large tomatoes

2 Logs of goat cheese

Fresh basil pesto or fresh torn basil leaves

black olives-chopped

olive oil

grated parmesan cheese

breadcrumbs

 

Method:

Lightly oil casserole then layer tomatoes,crumbled goat cheese,grated parmesan cheese and sprinkle with chopped olives, homemade pesto or torn basil leaves.

Repeat the layers, ending with tomatoes and breadcrumbs.

Bake until bubbly and brown, 25 minutes at 350 degrees
