Zucchini and Rice Timbale

Ingredients

8-10 zucchini sliced

1lb of aborio rice cooked

tomato sauce

fresh mozzarella

grated asiago cheese

 

Method

Oil casserole dish then layer the sliced zucchini.

Ladle some tomatoe sauce over the rice and add the cubed mozzaarella and sprinkle with asiago cheese and drizzle with olive oil.

Repeat layers ending with zucchini and asiago cheese.

Bake for 20-25 minutes at 350 degrees.
